Post your favorite recipes or recipe requests here for Thanksgiving or Christmas dinner, I got an email from the thread last year so I thought we should start a new one since people are looking.

Twas the Night Before Thanksgiving



'Twas the night before Thanksgiving and all through the kitchen;

I was cooking and baking and moanin' and *itchin'.

I've been here for hours, I can't stop to rest,

This place is a disaster, just look at this mess!

Tomorrow I've got thirty people to feed,

They expect all the trimmings, who cares what I need!

My feet are both blistered, I've got cramps in my legs,

The dog just knocked over a bowl full of eggs,

There's a knock at the door and the telephone's ringing;

Frosting drips on the counter as the microwave's dinging,

Two pies in the oven, dessert's almost done;

My cookbook is soiled with butter and crumbs.

I've had all I can stand, I can't take anymore;

Then in walks my husband , spilling rum on the floor.

He heaves and he wobbles, his balance unsteady

Then grins as he chuckles "The eggnog is ready!"

He looks all around and with total regret,

Say's "What's takin' so long? aren't you through in here yet?"

As quick as a flash I reach for a knife;

He loses an earlobe; I wanted his life!

He flees from the room in terror and pain,

and screams "MY GOD WOMAN, YOU'RE GOING INSANE!"

Now what was I doing, and what is that smell?

Oh, SH*T, it's the pies! They're burned all to hell!

I hate to admit when I make a mistake,

But I put them on BROIL instead of on BAKE.

What else can go wrong? Is there still more ahead?

If this is good living, I'd rather be dead.

Lord, don't get me wrong, I love holidays;

They just leave me exhausted, all shaky and dazed.

But I promise you one thing, if I live 'til next year,

You won't find me pulling my hair out in here.

I'll hire a maid, a cook, and a waiter;

And if that doesn't work, I'LL HAVE IT ALL CATERED!

This isn't exactly a holiday recipe, but no one complains when I make it for any occasion!

FUDGY BROWNIES

Important: DO NOT BEAT! Beating introduces air into the batter, and makes the brownies dry, not fudgy.

4 eggs
2 C. sugar
1 tsp. Salt
1 tsp. Vanilla
2/3 C. softened butter
5 Tbsp Cocoa – HEAPING
1-1/2 C. flour
2 C. chopped nuts (Pecans, walnuts, or hickory nuts taste best)

Stir eggs with spoon. Stir in sugar, salt & vanilla, then stir in butter and chocolate, and finally stir in the flour and walnuts.

Bake at 325°F for 30-35 minutes in a 9x13 pan. (Or until toothpick inserted near center comes out clean.)

Saw this recipe today on Paula Deen's show (Food Network). She made it as a side to go with ham. It got great reviews on the Food Network website.

PINEAPPLE CASSEROLE

1 cup sugar
6 Tablespoons all-purpose flour
2 cups grated sharp cheddar cheese
2 (20 ounce) cans pineapple
chunks drained & 6 Tbls pineapple juice reserved.
1 cup cracker crumbs (Ritz)
8 Tablespoons (1 stick butter), melted, plus extra for greasing pan. (Preheat oven to 350 degrees) Grease med. size casserole dish with butter

In a large bowl stir together the sugar & flour. Gradually stir in the cheese. Add the drained pineapple chunks and stir until ingredients are well combined. Pour mixture into casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter and reserved pineapple juice, stirring with rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 or 30 minutes (350 degrees) or until golden brown.

PecanPie

3 oz. bourbon
1 1/2 c. chopped pecans
3 eggs
1 c. light Karo
3/4 c. semi - sweet chocolate chips
1 c. sugar
1 stick butter, melted
1 tsp. vanilla
Pinch salt
1 unbaked pie shell

Soak pecans in bourbon for at least 4 hours. Mix all ingredients together and pour into unbaked shell. Bake at 350 degrees about 1 hour.

More chocolate snacks....

These are always requested at our Annual Thanksgiving Reunion:

BUCKEYE CANDY

1/4 lb. butter
1 lb. powdered sugar
2 c. chunky Jif peanut butter
3 c. Rice Krispies
12 oz.. Ghirardelli chocolate chips
1/3 cake paraffin
Mix butter, peanut butter, sugar and Rice Krispies well. Shape into 1 1/2 inch balls. Chill thoroughly.
Melt chocolate and 1/3 cake of paraffin over hot water. Dip balls into chocolate mixture and drain on wire rack or wax paper until chocolate sets. Refrigerate, keeps well. Can be kept in freezer.

I love to serve roasted vegetables for Thanksgiving.

1 bag baby carrots
1 large white or yellow onion, cut into eighths
2 small yams or sweet potatoes, cut into wedges
2-3 parsnips, peeled and cut
20 small Brussel Sprouts
2 beets, cleaned, trimmed and quartered
1-2 T canola oil
Salt
Pepper
Rosemary sprigs
Fresh thyme

In a large roasting pan, place the cut vegetables. (I like to cut the vegetables about the same size so that they cook at the same rate.) Toss with oil, then salt and pepper. Lay the rosemary sprigs around the vegetables. Add the fresh thyme (taken off the stalk.) Bake at 450 degrees until vegetables are fork tender and caramelized. You can use whatever vegetables you want, I add potatoes to this for Christmas dinner. You can also use whatever vegetables you want (turnips, squash, rutabaga, fennel, etc.)

Mashed potatoes, giblet gravy, and stuffing are, to me, the stars of the show. So, here's a recipe from my own cookbook:

OYSTER STUFFING

8 cups dried bread crumbs
1-1/2 cups chicken stock
1 pint oysters with liquor
1 10 oz. bag fresh spinach
1/2 lb bacon diced
2 medium onions diced
6 stalks celery diced
1 tsp dried thyme leaves
2 tbsps chopped fresh parsley
3 eggs
1/2 cup melted butter
1 tsp salt
1/2 tsp black pepper

1. heat chicken stock in saucepan, add oysters and liquor and cook 3 minutes.
2. Remove oysters and set aside.
3. Remove chicken/oyster stock from heat and set aside.
4. Saute' bacon until crisp.
5. Add onions and celery and saute' for 4 minutes. Remove from heat, add thyme and parsley. Let cool
6. Break eggs in large bowl and add 1/2 of the chicken/oyster stock.
7. Coarsely chop spinach.
8. Fold in bread crumbs, oysters, spinach, bacon and vegetable mix.
9. Add melted butter and remainder of oyster/chicken stock.
10. Add salt and pepper and toss gently.
11. Stuffing is now ready for the turkey.

MASHED POTATOES

Don't have the exact recipe in front of me, but anyone who has ever fixed MP before can figure it out easily. This recipe is used in a fairly well known restaurant in Dallas.

Boil Red potatoes (skin on) in chicken stock and cloves of garlic (amount depends on how much you are fixing), for about 40 minutes.
After boiling, drain stock.
Put in real butter.
Mash potatoes with garlic still in.
Pour in half and half.
Season with Paul Proudhomes (sp???) vegitable magic, and white and black pepper.

I know, I know, not very detailed. If you want the exact recipe (that's probably not exact but more detailed than this), freepmail me. But truthfully, if you've made MP before, you can figure out the portions.
