Trying this today...
Slow Cooker Creamy Italian Chicken
Ingredients:
4 boneless, skinless chicken breasts
¼ cup water
1 package dry Italian salad dressing mix
1 can cream of mushroom soup
1 package (8 ounces) cream cheese, softened
1 can (4 ounces) sliced mushrooms, drained
2 cups cooked rice
Directions: 1. Place chicken breasts in large slow cooker. Mix together
water and dressing mix and pour evenly over chicken. Place lid securely on
slow cooker and cook 3 hours on low. 2. Combine soup and cream cheese in a small bowl until well blended. Spread over chicken and sprinkle with
mushrooms. Replace lid and cook an additional 1 hour. 3. Stir to blend
sauce and serve over rice.

I made a yummy avacado salad the other day: chopped avacado, chopped green chiles, chevre cheese crumbles, and chopped tomaters. A little salt, a dash of lime. *swoon*
And now I'm super hungry. When's lunch?

I'm looking for hot and quick...I am so busy...I have never been so busy!! I've had a bit of lea-way in the past with supper, but now Steve is coming home from work every evening and is happy when I have something cooked and waiting!
So I'm looking for crock pot ideas...something I can set up in the morning and cook all day and be hot in the evening.
Also, I still want to do that cook for a day, eat for a month thing...that would be good too...to just stick a frozen casserole in the oven an hour or so before he's supposed to get home.
I'm such a failure at this kind of thing and want to improve. Normally, he comes home and fixes supper (and never complains, because 1. he's good at it and enjoys it and 2. he knows I've fixed two meals already during the day.
But it's my desire and conviction to have supper on the table "most" of the time.
