I bank the coals to one (or 2) sides for everything I cook. My wife buys some kind of premade burgers for parties that are made of 50% fuel, so it seems, and they don't flare up if I keep the coals to 1 side.

The Weber is the perfect grill, just get your coals going, then push them to the outer edges, and form a ring of coals with nothing in the center of the grill. You'll get plenty of heat, but no burn.
Using this method, you can cook any meat or vegetables you cook inside, outside- but with better flavor. Remember the mesquite, hickory, or apple chips, but a little goes a long way.

I've got the Big Green Egg, and we can get it as low as 150.
