Hi, OESY ..... I found another easy way to Respect the Lima Bean today .....

LIMA BEAN HOT DISH

1 lb. hamburger
1/2 lb. salt pork
1 can peas
1 can tomatoes
1 can lima beans
Onion
Croutons

Preheat oven to 350 degrees. Brown hamburger and salt pork with chopped onion. Drain grease.

In casserole dish combine peas, tomatoes, lima beans, hamburger, salt pork, and onion; thicken with 3 tablespoons flour.

Bake for 1 1/2 hours. Top with croutons.

Good afternoon, Meekie. We are having wonderful weather but there is a possibility of rain this weekend. I'm sure it will be warm again next week and we will be complaining about the heat in another month. :)

Happy Lima Bean Respect Day, everybody.

I like lima beans too.. dull & boring as they are (plain).. and good for sling shot? sure, if dry...

but as a boring vegetarian I don't add meat for flavor but do "other things"... lots of herbs/ spice..

One thing I do is saute garlic/onion in butter... make roux, then thin white sauce (w sour cream) and add heavy swiss cheese...throw in a handfull of slivered almonds & can of sliced waterchestnuts... put in casserole with more swiss cheese atop

get a lot of compliments on it..

big storm brewing here.. heavy winds. my two table umbrellas just headed up the street so I better chase them & get in Oliver who is out chasing raccoons away..(guarding the house?)

I will work a bit on my HTML while I have power.. It was out for w few hours again this afternoon...

such great posts, graphics here Amy.. you & the contributors are so great. I wish I had visited sooner.. and maybe someday will have time to catch up with prior threads..

Well, that's what you get for flying all over North America last weekend. LOL.

I can't wait for this week to end. It's been a chaotic mess with all kinds of meetings, field work, etc.

End of April is kinda hectic anyway. The good thing about it is the weather, which is improving daily so you should be smiling right now. Imagine doing what you just mentioned under cold, freezing conditions, LOL.

Your lima bean casserole sounds great. Since I really like the lima bean flavor, I'm sure I will enjoy it.

With lots of pre-school homework, I haven't had as much time to spend on the threads as I would like. Hey .... there is a lot to coloring, cutting and pasting. :)
