Keep it soaked (and I mean ice water) with water changes until you are changing mostly clear water.
Then you steak can be frozen until you are ready to cook.
And I'm serious about the stew. I have never tasted a better meat in one.

Bear attacks in my neck of the woods are usually due to wounded bears, or momma bear getting annoyed by someone being vacant.
Grizzlies are unpredictable compared to black bears.
