It was probably the Honda CBR1000RR, which came out in 04. It is the fastest bike Honda makes and goes 178. The really fast bikes are the Suzuki Hayabusa and Kawasaki ZX12 and ZX10. I have the Busa, and it matches the Kawasakis at about 185 in stock trim. There are no 'minor' mods that will put them over 200 (another media myth). However, defeating the speed limiter will get them to a little over 190. The Honda is not nearly as fast and unless there was some serious engine building going on, the trooper needs to re-calibrate his watch because he's about 30 MPH off.
