I used to make this recipe of sharp cheddar cheese, whole flax seed and a bit of flour (although in this case, you can use the flax seed meal to make a kind of dough, then roll into balls, flatten and bake into cheese crisps. Shouldnt that fit into the Atkins diet??? Anyway, I love em and they make for a good snackidoo...I dont follow a strict Atkins diet, but have been making an effort to curb my carbs. I used to eat quite healthy until I got married, and the hubby wanted chicken friend steak and mashed potatos and pasta all the time. And I have had to put my foot down about the Cokes. I can skip the chocolate, maybe the candy, but Cokes are a real bane of my existence, especially since I cant stand just plain water. I have to have some flavoring.

Would work for South Beachers, too, since baking cheese tends to get rid of a lot of the fat, or could use lowfat cheese.

As for water...the town water here tastes funny to me, especially since I grew up with nice well water. I manage to drink it, but sometimes add a little lemon juice. That works for me...
Do you care about artificial sweeteners? If you don't, Diet Dr Pepper is the one diet drink that doesn't taste diet. I love that stuff!
I bought a low-carb pie crust mix. I'm not sure it'll be good, but I think I can make quiche, and maybe some snacks, with it.

I used to drink two cans of Mountain Dew every day at work to keep from falling asleep :) Over the past few years I've kind of turned to juice and tea as a substitute for soda (here we call "soda" what everyone else in the country seems to call "Cokes", LOL!). Also since I like 7-Up/Mountain Dew type of "un-Cola" soft drinks, as a substitute for that when my sweet tooth is acting up I will sometimes drink ginger ale instead.
