GINGERBREAD LATTE A great Christmas morning beverage.

Steam whole milk or skim in your microwave about 3.15 min depending on your micro (I use a glass Starbucks-type mug). Do not boil. Remove cup and add 1/8-1/4 tea ea instant powdered espresso, instant coffee granules, than add a sprinkle of cinnamon, nutmeg, and cloves. Add sugar or sweetener. Blend it well.

For extra-special cafe style coffee, serve topped w/ extra creamy cool-whip or sweetened whipped cream, dusted with fresh grated nutmeg. So delicious.

CRANBERRY VELVET PIE This is nice since it's no-bake.

Beat fluffy 8 oz pkg cream cheese, gradually add pint heavy cream whipped to soft peaks with 1/4 c sugar, 1/2 tea vanilla extract, beating smooth. Fold in 16 oz can whole berry cranberry sauce, reserving few berries for garnish. Spoon into 6 oz prepared shortbread crust. Freeze 4 hours til firm. Garnish with reserved berries. Remove from freezer 15 min before serving.

I still haven't started. One of the recipes I'm using is the faux recipe called neiman marcus..it's excellent if you haven't tried it. Totally the best homemade cookie I've ever had.

Thanks gg. I checked the back of my "Good News' cd and you are correct to credit the wonderful writers. I only recommended Kathy Mattea's version because I have heard several of the competing renditions and I found her voice quality and her emotion riveting.
