That is why the stories are called post-apocalyptic and dystopian films. The word "Post" means after and apocalyptic suggests the end of the world. Dystopian describes what is left after civilization collapses.
All you have mentioned regarding Mad Max was the aftermath of the Third World War, not events of an ongoing WWIII.

There is ALOT of military represented but you are
1) Cherry Picking Mad Max Lore,
2) You are unfamiliar with certain people’s background.
Immortan Joe was actually COL Joe Moore of the Australian Army, and his crew was originally made up of his soldiers.
And George Miller himself said Lord Humungus and his right hand man, Wez were both military as well.
Thats just three main characters that are the manifestation of what the military would be 2-10 years after the bombs.
Go home, it's over. After the total nuclear devastation happens in one or two days, it doesn't matter if a few soldiers are still alive. The war is over.
A handful of survivors oppressing other survivors is not a continuation of World War Three.
