Ribs, oven method, fwiw:
>Rub, cover/rest 3 hrs min.
>Wrap tightly in foil and bake @ 250F for 2 hours.
>Unwrap, drain and slather sauce of preference.
>Increase heat to 425F and bake 15 minutes, repeat slather/bake at least once until done.
Temperatures/ovens/altitudes vary, obviously, but it’s worked well for me.

I would prefer to smoke them, but my smoker’s on the fritz (long story).
Previously, I’d wrap in butcher paper after rubbing, smoke 2-225 for 3 hours, slather then open grill with offset heat until finished, frequenting additional slathers.

I don’t care for “fall off the bone” ribs. Those who do wrap them back in foil for the duration only to broil or hot grill to caramelize the sauce as an afterthought.
I just don’t see the point, except that each has his own preference (mine is smoking, but I have to compromise for up to another year. So, oven it is, as written).
I do sometimes do ‘fall off the bones’ ribs, but with a different rub, always with smoke - yes, low & slow - and NEVER with sauce (again, in perhaps a year).
