I have 20 cameras in my surveillance system. I would say half are by Hikvision and the remainder are by Dahua. They are hooked up to NVRs and then to my Lan and then to my desk top computer. I do not see how Hikvision can gain access to them. If they could all they would see is the streets around my house and my backyard.
Back in 2008 and 2009, tens of thousands of government-owned hard drives were replaced when it was discovered that a Chinese-made controller chip within them was trying to contact two .cn web domains.

There are non-Chinese manufactured cameras using Chinese circuit boards that allow access.
Not sure where you can go and not be watched anymore. I have four cameras by Sanance and can’t keep anything running or access it reliably so I shut them off. I’m only guessing they can’t access them if they are unplugged...no I’m not really paranoid.
