I have a Traeger smoker, so I'd probably start with maple wood pellets. Then, I'd smoke the corned beef without the syrup rub for 2 hours, then add the syrup rub and put it back in the smoker for another 30 minutes to an hour to caramelize the syrup.
The wood pellet smoker is easier to temperature control. Smokers work best at 180-220 degrees. This guy said his Weber goes up to about 300 during the cook, so pellet smoking is a slightly longer process.

I’ll chime in here, if I may. Corned beef can be made from brisket or from round, and so can pastrami. The difference is in the process and the spicing. I don’t know what the term would be for beef that had been corned and then smoked; I’d be inclined to call it pastrami, myself.
Sandwich terminology simplified: Corned beef with sauerkraut = Reuben, pastrami with coleslaw = Rachel. (I’m ignoring the other ingredients and variations for now, except that the turkey version of a Rachel is being ignored with contempt.) As for a Reuben with pastrami instead of corned beef, I personally would still call it a Reuben.
I doubt I’ll ever try any meat smoked with maple syrup, simply because I don’t care for maple syrup, even on pancakes.
