I thought you weren't supposed to but a wet rub on meats that are going to be smoked, because the smoke doesn't permeate the meat but gets into the liquid instead.

I have a Traeger smoker, so I'd probably start with maple wood pellets. Then, I'd smoke the corned beef without the syrup rub for 2 hours, then add the syrup rub and put it back in the smoker for another 30 minutes to an hour to caramelize the syrup.

The wood pellet smoker is easier to temperature control. Smokers work best at 180-220 degrees. This guy said his Weber goes up to about 300 during the cook, so pellet smoking is a slightly longer process.

Why do you feel the need to mess with perfection?

The only thing that would make a Reuben sandwich better is more of everything.

And grill the sauerkraut to make it a little crunchy.

I’ll chime in here, if I may. Corned beef can be made from brisket or from round, and so can pastrami. The difference is in the process and the spicing. I don’t know what the term would be for beef that had been corned and then smoked; I’d be inclined to call it pastrami, myself.

Sandwich terminology simplified: Corned beef with sauerkraut = Reuben, pastrami with coleslaw = Rachel. (I’m ignoring the other ingredients and variations for now, except that the turkey version of a Rachel is being ignored with contempt.) As for a Reuben with pastrami instead of corned beef, I personally would still call it a Reuben.

I doubt I’ll ever try any meat smoked with maple syrup, simply because I don’t care for maple syrup, even on pancakes.

We of the Canadian Maple Syrup Coop find your lack of interest in maple syrup to be, well, puzzling.

Maple syrup is a natural product that is both tasty and nutritious.

Here in Canada, we merely pound a faucet into a maple tree and the syrup flows out like Democrats handing out other people’s money.

We encourage you to think again about maple syrup.

Here in Canada, we call pancakes “Galoshes”. And we love maple syrup on our galoshes!

We have done away with all those old stereotypes like Mrs. Butterworth’s and Aunt Jemima.

Maple improves anything. Question (I did watch the youtube)...
did you start with a beef brisket that was already “corned” (the spices) or did you start with a plain beef brisket?

First I cook breakfast on the smoker, then time to smoke.
Maple smoked carmelized bacon 3#
Beef jerky 4#
Beef brisket 6#
Smoked fish dip 5#

My brisket was already corned. They are selling (Point Cut) for just $1.99/lb at Aldis as they do every season leading into St. Patrick’s Day.
