Just recently made the switch to iPhone and am pleasantly surprised. The learning of new tech always interests me ... however... I have found that browsers on the iPhone, regardless of which one I use, are not very mobile-friendly. Text appears very small unless I turn it sideways and do not have obvious options to resize. Any help in this regard would be very much appreciated.

I had an Android phone for almost 10 years....I originally HATED the Iphone. Everything was locked down, no back button, no number row and other things. However, it simply works on everything. Links up to BT, to Roku, to Echo to my watch or whatever and never randomly reboots. I have to say I will not be going back to Android any time soon. I have a Samsung tablet (brand new) and reliability and “quickness” ain’t even close.
Under settings (accessibility?) you can increase font size.
Safari browser is very good.
We love the cameras in our 11 Pros (have 2 of ‘em) the wide angle lens is really good for interior photos.

I use Safari. Turn the phone sideways and double tap on the text youre reading. It usually zooms to paragraph width. Use it all the time on FR... like now.
FR is a struggle on the iPhone. I run mine with the text sized at 175%. Any larger and the search bar obscures any notifications of replies. When reading articles, many have a reader view, which is very nice. I dont know why all articles on the FR page dont have that feature. I am new to the iPhone as well, and mostly hate it. I only got it to connect to my car, which only has Apple CarPlay. My next phone will be another Android.
If viewing FR is the issue, double-tap on a story highlight and it’ll zoom in to that column.
You can also adjust font size in your settings. Two settings categories you can use to do that ... Display & Brightness and Accessibility.
Try going to Settings, Accessibility, Display and Text Size. Play around in there and you should find something to get you close to what you want...SSZ
Changing the text size on Safari for iPhone
The first way is simple, so dive right in.
Open Safari and navigate to the desired website.
When it has loaded, Safari will display with an ‘aA’ icon at the top left of the display. Tap this to see a menu.
You can then tap the small ‘A’ to reduce text size or the large ‘A’ to increase it.
The text size will change each time to show you the changed web page. Just tap away from the menu when you’re happy with the size.
I always use Safari on iPhone and iPad. I always turn my phone sideways for something like FR. On my PC I use Chrome, but I like my “i” stuff to use what they are optimized for.
I want to buy a Lenovo Z6 Pro, 8GB RAM 256GB Storage, with 5 cameras and a 8 core cpu for $250, however it doesn’t have all the LTE/5G bands to work correctly in the united states. China and India gets some really nice cell phones at a really excellent price without having to pay the 400% Apple Tax.

FR isn’t mobile responsive - nor friendly.

My wife made the switch to iPhone a couple of years ago. We’ve gotten very familiar with how it works. Meanwhile, I just got a new phone. An LG V30 from Amazon. Brand new. It cost $160 and I like it a lot more than her iPhone 7.
And mine wirelessly charges. :)
I thought about going “all iPhone” in the family and looked the products over and decided to stick with Android. I’m not really a fan of proprietary stuff. It does bring advantages, but also disadvantages...
I use iPhone/iPad/MacBook Pro and always use Safari. I love how everything sync’s up between the devices. When I close the MacBook my iPhone/iPad picks up in the same place.
I’m looking at switching also mostly because younguns in family do facetime...and as a brain challenge for me.
