People could eat rats also but really?
I can see that youve never gone 3 days without food. Do that and youll eat damned near anything put in front of you.

Fasting. People go many days without food, just drink water and fruit and vegetable juice.

I’ve gone 5 days. I love sqirrel, breaded and fried. But I can’t get past the notion that groundhog = prairie dog = plague.

I have deer in my yard.
No wonder demonicrat cities have a rat problem, welfare keeps the voters fat and happy and lazy so they don't even clean up after themselves.

I used to do that as a teenager, just for kicks. After a day, I didn't feel hungry. Certainly not famished to the point of wanting to eat anything. Granted, it was voluntary, and food was available. In a survival situation, rats wouldn't be my first choice until they were nearly my only choice.

I do at least a 3-day fast once a month, and I have gone as long as 6 days without food. After the first 48 hours or so, the feeling of hunger actually subsides. That being said; I get your point, and I would try some well-prepared, well-seasoned groundhog.
