I spent close to 25 yrs working in NYC and living in the area. Your cousin fits the stereotypical North Jersey statist profile to a tee. You don't not mention if she's married - I presume she is single. If so she fits the stereotype even MORE.
My experience with this persona is they are internally very sad. They have eschewed the "traditional" sources of comfort - family, faith, purpose beyond the office - and replaced it with a secular theocracy. Thus when you (or anyone) questions their "liberal fatwa" or - as sounds like it's the case here - simply defend freedom and liberty, they act like you are a heretic.
People living in deep red states often don't have these types of problems...living in blue or purple areas for us Deplorables is akin (on a metaphysical level) to missionaries in hostile territory. Thus the advice to never see her again, while certainly is an option, may not be plausible. Now, some people are beyond reach...that may be your cousin. But if I am right that she's miserable internally, I would wait for her to cool off, then find a moment to call her and express genuine concern (which you see to have, good FRiend) for why she flipped out....I can almost guarantee this has less to do with the economy and Trump than it is that she could use a sane ear to bend, and she may take your olive branch.
Or not. But if you can get her aboard the road to normalcy, you will feel great.

We went to dinner with two other couples Sunday and one of the guys started in with “I’m a conservative but...”
The following hour was torture.
1) blind hatred of trump
2) trump is a moron
3) trump can’t and won’t try to read
4) this guy doesn’t let his girls see his parents because they voted for trump
5) every conservative he knows hates trump
6) the market going down is his fault
7) but trump gets no credit for it going up
It went on and on. I found the whole thing absurd and let him rant without correcting a single misstated “fact”.
Afterwards I told my wife that I can’t do dinner with them again. It was exhausting listening to it while not engaging.
