Gun v. knife defenses are fairly common, but usually the person with the knife realizes that they are outclassed by someone with a gun, and runs away. To have three such cases where the person with the knife is shot, in one day, is uncommon. It may mean that more self defense cases are being covered; it may simply be a statistical fluke.
The most dangerous situation for a defender facing someone with a knife, is to not know that their opponent is armed until they are under assault. The first case involves alleged defense of another in Phoenix, Arizona, From greenfieldreporter.com:
A 29-year-old woman who was also at the home told investigators she and the deceased victim went to the house and an argument led to the 27-year-old allegedly stabbing the 53-year-old. A 20-year-old man who lives in the home then shot the stabbing suspect, telling police he acted in defense of the other man.The second case involves potential multiple attackers, one of which pulled out a knife in Wellington, Fl. The homeowner came out and got into a verbal dispute with them.The third case happened in New Haven, CT. It has only been reported that the shooter says that the knifeman tried to attack him. The difference in ages is significant. From wtnh.com:

Police say 23-year-old Leroy Brown was shot in the side of the head by 71-year-old Anthony Anamasi. Police are still working to gather information regarding what may have lead to the gunfire, but authorities add the man who made the 911 call said he had shot man who had tried to attack him with a knife.Assume that everything that you say on a 911 line will be recorded. Many people, in the emotion aftermath of a shooting, say things that are not as carefully constructed as they need to be to stand up to a prosecutorial assault. Extreme care is required.

Better yet, feint at the chest and when they lift up their arms to back away, slash under the back side of the bicep. Will die every time.
Though, Ive hoped that my fencing skills would help: Crouch into a defensible fencing stance, and with lightning speed, thrust blade-up under the ribcage for the heart. Parry as necessary.

The heart is a vital organ. A slender, flat bladed rapier or foil can slip in and cause damage. A typical knife won’t quite “cut it.”
With a typical knife you’re better off going for somewhere with an artery somewhat close to the surface or major bundle of veins.
If you have time to continue the fight and don’t mind the noise a good strike near the groin offers plenty of targets. One effective strike and you need only block/evade while the opponent bleeds out.
If you insist on going for a heart strike you might have better luck striking under the armpit, but only if if your blade is very strong, long and flat.
This is a very rookie mistake. Trained knife fighters will wait until they have closed the distance to at least their lunge distance before they will display the knife.
Drawn but concealed wins the element of surprise.

I spent years working with knives, you need friends that will practice with you, the kind of thing that a lot of physical 20 year olds do constantly, fight, fight, fight.
If your friends during your 20s and early 30s are not the type who love to fight and wrestle and play rough constantly, then you probably need to join a class or something.
Well, sadly, my 20s and even my 30s are far behind me now. I suppose I’ll just make good use of my concealed-carry permit.
But if knives give you the weeby jeevys, like they do most people, watch some videos and practice some at home, or if you can afford it, take a few classes specializing in knife fighting and defense, after all, it doesn't hurt for you to carry a knife to back up your pistol.
Don't practice “knife fighting” that instills a duelling mentality. You do not want to get into blender contest ala’ Tommy Lee Jone/Steven Seagal. A more accurate term would be knife killing. A human can remain conscious and dangerous even when a major vessel is cut.
Look up The Dead Mans 10(seconds). You want as close to a one hit stop as you can get.

This morning I lucked out and was able to buy two boxes of ammo.
I placed the boxes on the front seat and headed back home, but stopped at a gas station where a drop-dead gorgeous blonde in a short skirt was filling up her car at the next pump.

Didn't need to shoot, he boogied. Guy's in prison for 67 years, Had a LOT of other charges. Girl he pointed the knife at is now 24, and I get free hugs whenever I see her.

As for the poster who asked about knife training there are several effective systems for blade use, with some of the more effective ones being Filipino with styles like Pekiti Tirsia Kali teaching a very effective knife system. There are also other systems ranging from a South African system often used by criminals (they use cheap switchblades and like to shake or shimmer the blade as they attack), to a very effective American-created style called Libre Fighting Systems that, in my opinion, is even better than Pekiti Tirsia in terms of using a knife. Some of the things taught in Libre border on the criminal. And talking about criminal, there are some prison-style attacks that are almost exclusively stabbing-type moves, and they are very effective (and yes, there are people who teach prison-style knife, and even a prison-style boxing system called 52 Blocks).
Anyways, underestimating a knife is something that can be quite dangerous. Fortunately most knife users are only employing the blade to threaten/intimidate their target, which means that the target has sufficient time to if a CCW holder defend themselves. However, if the knife user is going for the attack, by the time the target knows he is a victim he will already be stabbed multiple times.
As an aside many of the knife defenses taught in martial arts are completely useless. Against a committed attacker NONE of those fancy wrist movements will work for over 90% of their users. The most effective self-defense against a knife attack is situational awareness. That is even more effective than having a firearm when it comes to a committed knife attacker.
Sources: Before I got licensed and got my 2,500 Dollar Glock (in my country things are expensive and prices ridiculously ramped up ...that 2,500 Glock would cost about 550 in the US), I studied a variety of different knife combative systems that taught me just how dangerous a knife is in the right hands. I honestly couldnt over emphasize just how dangerous a committed knife attacker can be, and that within 5 feet I would be more effective with a blade than with my overpriced G19 (and I say this as someone who does very well in IDPA). I have also realized that many gun owners think they own death rays, and a number develop very bad habits/expectations where they feel they are somehow protected because they have a firearm. A firearm is simply a tool, and a tool that without proper dynamic training (and I don't mean plugging paper), situational awareness and proper mindset, will only work against people who are even less prepared than you are. Against someone who is better prepared, even when he 'only' has a knife, many gun owners would not even get a chance to understand what is happening before they have at least 7 critical stabs in their torso.
The only saving grace is that most knife attackers are (a) inexperienced and (b) almost always interested in intimidating rather than doing the stealth/surprise attack that you normally see in Filipino/Prison knife systems (where the victim literally doesnt know whats happening before the blade is in their body).
