People who are skeptical about being prepared need to know most grocery stores have only enough on the shelves for a few days at most so it would not even take a long-term event to cause real problems with available supplies. Any time there is a major storm or what have you the media shows the empty shelves but many still don’t seem to understand or believe how fast necessary items will disappear in an emergency situation.

If you don’t have one years worth of food and the means to defend it you need to get cracking. After the quake today in DC it looks like the New Madrid fault is waking up. There are a lot of things that may happen that have nothing to do with Muslim terrorists.

... and all that goes along with each of the above.
Food will get you through times of no gold better than gold will get you through times of no food.

Does anyone have any suggestions for having food in a humid state? I live in FL, and I have no place to store food where it is air conditioned. I can keep some small supplies in the regular house, but not a lot. In any case, if it gets bad, we won’t have electric anyway.

Hard red winter wheat berries stored sealed in food grade three pound bags in sealed five gallon food grade buckets with oxygen absorbers is equal to about 300 pounds of Wheat berries. You can verify by CLICKING HERE. This is about 60 pounds of ground wheat flour for bread. About four normal sized loaves of bread can be made from about three pounds of flour. So, about 80 normal sized loaves of bread can be made from about one bucket of wheat berries that are ground into flour. Food grade five gallon buckets sealed with oxygen absorbers can store wheat berries for about 20 to 25 years. Likewise, rice, oats and pot barley can be stored similarly. Dehydrated vegetables can also be stored the same way for for about the same length of time. In a pinch, several packages of dehydrated OXO soup cubes can do for some of the soups. Toss in some packs of salt, pepper and other seasonings and you can make your own broths from scratch. They are quite tasty and inexpensive.
So far, that's bread, rice and grain flour and other dishes along with soups and vegetable dishes looked after,
Further and in my own opinion, Tammy at Dehydrate2store.com is personally responsible for saving several hundred thousand lives with the free information she offers on her website. Again, in my opinion, she is a good person and provides the information freely. My disclaimer is, I have no financial or personal interests in her website.
Learn to make your own bread. It tastes far superior to store bought. Its cheaper and very easy to make. Mix some flour, water, salt, sugar and some yeast (yeast starter from fresh air or yeast stored for three years or less) and that's pretty much it.
If the food is sealed with working oxygen absorbers, humidity should not be a factor, even in Florida. Lastly, garden, garden, garden. If you can eat it, grow it.
Lastly, Kartographer who started this thread has a very good survival PDF that he created.

Oh yeah, another thing; aside from the wonders of cast iron skillets, cast iron pots and cast iron Dutch Ovens, you might also buy a good quality and quite large PRESSURE COOKER and learn to use it. They actually work.

South Alabama here.
My Granny had a small out building that she stored canned food in, no AC, but she ran a small fan out there. Seemed to keep it cool enough, nobody ever went to the hospital from eating it :)
And, if you worry about that, then clean out from under your bed, and roll cans under it. You’ll be surprised how much will fit. I was.

They make storage boxes that are just the right height to slide under a bed. Those would be handing and allow you to easily pull things out.
As suggested consider storing in food grade buckets and mylar over cans because of the rust factor that comes with cans.

I’m all for preparing for worst case sinarios and I have a small stash to provide for my family for a bit, but even if you spend mucho bucks for kettles and ammo and years worth of food you have to realize that you can’t survive a worst case situation by yourself. You need to be able and willing to organize with a larger community. That will mean sharing your stocks with others who didn’t plan. Sucks, but it’s the truth. United you can stand against a hungry horde, alone you can be over run.
