Polish Hunter's Stew - Bigos

•1 cup pitted prunes •1/2 ounce dried Polish or porcini mushrooms •2 cups boiling water •1 tablespoon bacon drippings or vegetable oil •1 medium onion, chopped •1 small head fresh cabbage, chopped •1 pound sauerkraut, rinsed well and drained •1/2 pound smoked Polish sausage ("kielbasa"), cut into 1-inch pieces •1/2 pound cooked fresh Polish sausage ("kielbasa"), cut into 1-inch pieces •1 pound leftover meat, cut into 1-inch pieces •3 large tomatoes, peeled and chopped •1 cup dry red wine, preferably Madeira •1 bay leaf •Salt and black pepper to taste Makes 6 to 8 servings

Borscht! There was a hotel in Moscow that served it three times a day with each meal. Man, that was good stuff!

I was once in a historical hotel in Savannah, GA, and had the best She-Crab soup.

I have been hesitant to try and make it, but I still savor that memory years later.

Manhattan Clam Chowder:

INGREDIENTS : 6 slices chopped bacon 2 cups diced onions (about 2 large onions) 1 cup diced celery (about 2 stalks) 1 cup diced carrots (about 2 large carrots) 1 cup clam juice 2 cups diced tomatoes 2 cups tomato juice 1 teaspoon dried thyme 1 bay leaf 1 cup diced potatoes (about 2 medium potatoes) 28-ounce can of chopped clams Salt and freshly ground black pepper to taste COOKING INSTRUCTIONS : 1. In a pan over medium-high heat, cook the bacon until it is crisp. Remove the bacon and drain the majority of the grease. Leave more or less, depending on how much you’re comfortable with (I usually leave a tablespoon or two at most). 2. Add the onions to the remaining grease and cook until golden. Add all of the other ingredients except the clams and the potatoes and cook for 15 minutes, stirring frequently. 3. Add the potatoes and clams and simmer until the potatoes are tender. Add salt and freshly ground black pepper and taste.

Anderson Split Pea.

We stopped in Buellton a couple of weeks ago, and wifey noticed that they now sell cans with bacon and/or ham......she bought a couple; hadn't cared for the lack of those ingredients before this.

Sauerkraut soup

Ingredients 1 pound smoked sausage, such as kielbasa, diced 1 large onion, finely chopped 1 rib celery, finely chopped 1 tablespoon minced garlic 1 cup hard cider 1 (32-ounce) jar sauerkraut, drained and rinsed briefly 8 cups canned low-sodium chicken broth 1 cup peeled and cubed potatoes 3 sprigs fresh thyme 1/2 teaspoon freshly ground black pepper Directions Heat a large soup pot over medium-high heat and add the sausage. Cook until the sausage is caramelized and the fat is rendered, 4 to 6 minutes. Add the onions and celery and cook, stirring occasionally, until vegetables are soft and lightly browned, about 4 minutes. Add the garlic and cook, stirring, for 1 minute. Add the cider and cook until almost completely reduced. Add the sauerkraut, broth, potatoes, thyme and pepper and bring to a boil. Reduce the heat to a low simmer and cook, stirring occasionally, until potatoes and sauerkraut are very tender and the broth is flavorful, 45 minutes to 1 hour. Taste and adjust the seasoning, if necessary. Serve immediately, with hot, crusty bread on the side.
