Hummingbird Cake

This cake resembles a fruity (banana and pineapple) version of a spice cake...try it, you'll absolutely love it!

Ingredients:

3 cups flour

2 cups sugar

1 tsp. salt

1 tsp. baking soda

1 tsp. cinnamon

1 1/2 cup vegetable oil

3 eggs, beaten

1 1/2 tsp. vanilla

1 8 oz. can crushed pineapple (do not drain)

3 chopped bananas

1 cup chopped pecans (optional)

This sounds like a cake they call “Happy Cake” in Hawaii. Sell it from a stand up near Hickham, IIRC.

Actually, I've never heard of Hummingbird Cake before today.....

However, I do have a great recipe for Hummingbird Pot Pie....
(It's a lot like Chicken Pot Pie but a lot smaller)

There's more than one recipe for this cake - I've got one around here somewhere that's got a few more ingredients...
