Summer means tomatoes

So today, I had the first serious round of my great grandmother Hale’s sliced tomatoes, a recipe from the Hale House tea room in Glastonbury, CT from– I’m not sure– the twenties? It’s simple but guaranteed if the ingredients are exactly right– garden fresh tomatoes and basil, in particular. I’m posting this in part to taunt a regular reader in Maine, where high Summer has apparently not arrived to this extent....

I make my tomato salad with roma tomatoes, so it doesn’t get all watery. Fresh mozzerella balls (dime size, cut in half), a handful of fresh basil chopped small, a drizzling of olive oil, a little balsamic vinegar, and i hit it with a bunch, like 2 tablespoons, of italian seasoning (usually takes a while to soak in the juices), oregano, parsley, some rubbed sage and some sea salt, with a bit of Adobo seasoning. Oh yeah!

I’ll do salsa this year, the cilantro is growing nicely. tomatoes, cilantro, fine chopped cukes, onions (vidalia and red onions) with a tiny shot of balsamic.

Put moth balls around them---said to keep insects away...but not said by me.

I have a friend who moth balls around a tree to keep insects away. A man came to put a Martin house up and starting hollaring..."There are about a hundred bird eggs under this tree!"

Put mayo on sliced tomatoes and put cracker crumbs on them...both sides.

I've been having fried green tomatoes...nothing better.

The drought and 100+ temps have hastened the end of tomato season in Southern Texas. We are hoping for late summer rains to plant a fall crop. We often have fresh tomatoes for our Thanksgiving dinner in Houston.

Oh man! I sure miss the fried green tomatoes, fried ochra, chicken fried steak, and cornbread ... with a bottomless glass of Iced Tea and apple cobbler for dessert!

Since my mother-in-law joined us last fall, I have a nearly endless supply of cornbread and I like it! You can keep the okra, though.

There was a morning during my college years when the only thing to eat in the apartment was a jar of pickled ohcra. Had not had a meal in two days, so that ochra tasted like manna! Actually, chopped, breaded and fried, ochra is very good, especially if you have breaded/fried squash with it.

Whip is not Mayo ... whipped veggies oil can't hold a candle to the artery cloggin' Mayo of Southern cookin'.

Here's a quick recipe for ya:

Bisquick (1 1/2 cups); lots of sharp cheddar, shredded (one cup); three tablespoons of Dukes; half a package of Hidden Valley ranch powder; dash of water; mix and drop as biscuits on baking pan or pour into glass pan and cook as a pone until crust is very brown.

Still about three to four weeks, at least, before we see ripe slicing tomatoes here in zone 7 of NC. A bumper crop this year, we have have enough rain to go w/o the irrigation most weeks.

The recipe sounds fantastic, easy and quick—T/Y! How about some chopped Vidalia onions on the top. Ripen tomatoes, ripen!

Hey RD, I've got 7’ tall tomatoes in containers and 5’ in the garden. These are the ‘ugly’ tomato variety (hybrid beefsteak). These babies are almost 5” in diameter. Just starting to turn in Florida. Planted them from seeds in March. Picking pink cow-peas every three days, bush beans daily and the black beans are starting to turn. Don't get me started on the watermelon. I need a bigger garden...
