I knew if I hunted far enough down in the stack I could find my recipe for Ranger Cookies (and no coconut, suziQ). Think I'll have to make some of these after the Mansion Cookies are gone. :-)
Granola Ranger Cookies
1/2 cup shortening
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups Granola
Heat oven to 350 degrees.
Mix shortening , sugars, egg and vanilla throughly. Stir in remaining ingredients.
Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets.
Bake 10-15 minutes, remove immediately to cool.

Scots and Irish can get away with it... but I'm thinkin' people would just look at me funny if I did it.
They'd all be thinkin': "Hey, what's that Norwegian dude over there wearing a kilt for? That just ain't right..."
Me... I'd need a good reindeer fur Viking tunic. But there again, wearing that to the office would generate some stares as well, I'm thinkin.
