Ooooo, that sounds delicious! I had decided to make a carrot cake tomorrow, but now I'm tempted to make the souffle. I'll think about it tomorrow, as Scarlett would say.

I meant to add this note to the Carrot Souffle recipe. I put the carrots through the blender instead of mashing them. I can't imagine mashing them by hand until they are completely smooth.
