I meant to add this note to the Carrot Souffle recipe. I put the carrots through the blender instead of mashing them. I can't imagine mashing them by hand until they are completely smooth.

Good Morning, everyone. Thanksgiving Dinner on hubby's side today. It should be a madhouse.

Last night after Mass we went to a nearby steakhouse for a bit to eat. When we returned home there was a message on the machine from hubby's mother,,, it seems his dad was not well and she wanted him to come right away. Hubby went back to town (2 miles) and was gone about 45 minutes. When he returned he said Father Marty had been there, gave his dad the Last Rites,,,,then his dad got out of bed, went to the kitchen and ate supper, and is feeling better now.

This is a repeat (with the exception of the Last Rites) of earlier episodes. I worry about hubby's Mother. I think she is reluctant to send him to the Nursing Home because she fears it will be a reflection on her inability to care for him.
