The GUILD 11-21-2002 THANKSGIVING DAY RECIPE EXCHANGE!!!!

Roasted Free-Range Turkey with Pear Chestnut Stuffing

Serves 8 to 10 The stuffing may also be baked separately in a buttered casserole at 375° until heated throughout, thirty to forty-five minutes.

12 tablespoons (1 1/2 sticks) unsalted butter
6 stalks celery, strings removed, cut into 1/4-inch dice
2 large onions, cut into 1/4-inch dice
1/4 cup fresh thyme leaves, finely chopped
1 teaspoon finely chopped fresh sage leaves
1 tablespoon coarsely chopped fresh flat-leaf parsley
1/2 pound roasted chestnuts, shelled and chopped
27 slices stale white bread (1 1/2 pounds), crusts removed and cut into 1/4-inch dice (about 8 cups), lightly toasted
1 1/4 cups Homemade Turkey Stock, or low-sodium canned chicken broth, skimmed of fat
4 unripe Anjou pears, cored, peeled, and cut into 1/2-inch dice
1 tablespoon salt
1 twelve- to fourteen-pound free-range turkey

1. Heat oven to 375°. Make stuffing: In a large skillet, melt 4 tablespoons butter over medium heat. Add celery and onions; cook, stirring, until translucent, about 10 minutes. Stir in 2 tablespoons thyme, and sage, parsley, chestnuts, and bread. Add stock, 1/2 cup at a time, until bread becomes moist. Stir in pears; remove from heat.

2. Place remaining 1 stick butter, remaining 2 tablespoons thyme, and 1 teaspoon salt in food processor. Pulse until well combined; set aside.

3. Wash turkey, and pat dry. Place, breast side up, on a roasting rack set in a large roasting pan. Season turkey cavity with remaining 2 teaspoons salt. Fill cavity loosely with stuffing. Tie legs together with kitchen string. Fold neck flap over; secure with skewers. Rub thyme-butter mixture all over turkey.

4. Roast for 2 1/2 hours, basting often. Continue baking 30 to 45 minutes more, until an instant-read thermometer inserted into the thickest part of the thigh reads 180°. If turkey becomes too brown, tent it with aluminum foil. Let cool for 20 to 30 minutes before removing the stuffing and carving.

Here's one for a layered cream pie thing my daughter is making.

She doubles this and puts it in a 9 X 11 baking pan, but there is extra leftover of pudding and such, so she puts it up in a small bowl in the freezer.

1st Layer:
MIX: 1-stick of butter, melted. 1 c flour. 3/4 c chopped pecans. (Mix should be crumbly)

Bake for 15 minutes @350.
Let Cool.

2nd Layer:
MIX: 1-8oz crm cheese (soft). 1 c pwd sugar. 1 carton small cool whip.

3rd Layer:
BLEND: 2 small instant chocolate puddings, 3 c milk.

4th Layer:
Cool Whip and pecans.

Refrigerate.

I ordered the special value this morning and the bisque plus brush. If it wasn't waitlited when you ordered you should be ok. The glee also sounds tempting. Have you tried it?

Tubender, I must respectfully disagree. Hellmans and Miracle Whip have completely different tastes

...and that's why my fact checker won't let me in the kitchen. It is Hellmans and Best Foods but it's nice to know you read my posts.

What on earth is that woman talking about?! The only food I've ever heard of anyone scraping mold off was cheese. I've done that...not scrape, cut. But she makes it sound like some kind of common thing.

I have no idea. I just caught this woman on CNBC in an interview and they had 'gourmet' under her name. Didn't see much of it so don't know if they addressed the mold scraping. (ewww) Hmmmmm, better keep a closer eye on these 'experts' they drag out.

I'm hoping this posts, for some reason this page of the thread won't show for me, half of it is blank.

Nope, I still can't get past that picture of Dennis Hopper and the page all around him is blank. Anybody else having this problem?

It wasn't waitlisted when I ordered it, but was shortly thereafter. I haven't tried the glee, do you like it? I also ordered the bisque, and ordered auto-delivery for the foundation. I'm sold on this makeup.

I use Glee as my blush. I love the stuff. I have been using it for over a year. I use True over it when I want a little sparkle. That was in the summer kit. The only thing I have ever run out of is the foundation.

Can you believe that we used to use liquid foundation? WHAT WERE WE THINKING!?!

I gave up on liquid foundation years ago. I have rosecea (sp?) and the foundation would raise havoc with my face. I was pretty skeptical about Bare Escentuals, but it works so well. Hmmm, do you think I can get something for my testimonial? :)

I also have rosaeca and BE is the only thing that doesn't irritate it. I am glad that you got the bucket of bisque, it is great for covering all the nasty stuff.

As far as testimonials go, did you see that 12 pack set of lotions that she had on today? That's what I got for doing the commercial.
