If Defense is trying to get rid of the holdout, does that mean that 11 want to let her walk and only one juror thinks she’s guilty?

Could be, but it could be the opposite as well. The defense may feel that the 11 would convict her, then ask for a new trial because there were only 11 jurors instead of 12.

The point is (which the judge made very well) that IF you believe in juries at all, you have to believe that the single juror who is morally certain in their verdict can and should prevent a unanimous result.
