The “Vortec 5.7” is an old Chevy 350 with a sticker on it. The “Vortec 5.3” is a LS-series that only shares the bore centers with it.

That’s true... I think both are fairly good engines. I like the simplicity of the 5.7 but I’d perhaps give the edge to the 5.3 if the AFM is disabled...
AFM is only a recent addition to the LS line. There’s millions of them out there that don’t have it, and there are delete/defeat methods for those that do.
