I think a “preventive” for cholesterol is never eating anything with saturated fat in it. I don’t eat pork or beef, butter,, no pizza, )which I hate anyway) , and gerally avoid satfat.

extra-virgin olive oil is great for sautéing alaskan salmon, which has no satfat, nor does cod or catfish. all uber yum.

Olive oil does have some saturated fat: 14% by volume or about 2 grams of saturated fat per tablespoon. By comparison, butter has 7.5 grams of saturated fat in a tablespoon, and canola oil only has 1 gram. No idea which of these three is actually healthiest, and may totally vary from person to person.
