Maybe, but it would be less and not as reliable.

Raw vinegar (including raw apples cider vinegar) will have some probiotics, but not remotely in the scale of what is in natural sauerkraut (that is in your refrigeration section).

The cabbage itself is also has tons of fiber, vitamin A, K and various phytonutrients.
