Actually, gylcerides naturally occur in foods, are generally recognized as safe, and are sometimes taken as health supplements. In business school, the example of Apeel could be taught as a case in which a good product that is a success in the marketplace is undone by PR failure in not responding to critics in a timely and effective manner.

It seems to me that they could coat fresh fruits and vegetables in a sugar/glycerol compound and that would preserve them for a longer duration. Both chemicals are safe..........
