Anybody who is into the YouTube learning process (grins) I found a channel called “Survival Kitchen 1930” which is all about canning meats and other “Amish’ish” food preservation techniques from the depression era.

We are probably in, and have been in the 88 year phase of the 11,22,44, and 88 year sun spot cycles I studied in Astronomy class in 1959. Drought has been and continues to be common during this phase for several years. The last 88 year period was in the 1030s famous for the Great Depression, loss of many farms and farmers, and the Dust Bowl.
This probably explains the severe fires in California these past years. Southwest Russia, eastern Ukraine, Crimea, and Iran are all areas suffering severe drought and violence and hardship. The breadbasket of Russia/Ukraine is suffering which is why Victory Gardening will be especially valuable this year to keep our food prices down. Pity the poor third world countries which will suffer loss of affordable food not being produced in the Ukraine and Russian agricultural areas.

Best advice I can give anyone when it comes to canning/preserving... buy a copy of the Ball Canning Guide. While you're learning the processes, follow the instructions to the letter. Once you've run a few dozen canner loads you'll start to get a feel for things that you can deviate on according to your local weather conditions at the time of processing.
With that book you will learn to preserve your own harvest safely. It's also loaded with great recipes to try while you're at it.
Highly recommended.
