Twice Baked Breakfast Potatoes

I subbed chopped ham for the bacon and I scrambled four eggs, them added them to the potato pulp and added some cheddar cheese and seasonings. Then I re-filled the potato skins, sprinkled more cheese on top, threw on some fresh chives, then nuked them for two minutes to warm them back through.
Served with Rye Toast, Yogurt & Blueberries (frozen) and homemade V-8 juice.
