“Whole wheat made up over 50% of human calories for centuries. Even in the US.”

Human life expectancy has been under 50 yo for centuries too, so what? Wheat protein has always been protein for the poor compared to animal protein, there never has been any controversy about it anywhere on the planet until about 5 seconds ago.

“Bob’s Red Mill tests at 13-15% protein in spite of the fact you were misinformed.”

Uhh?? Where was I misinformed and what Bob’s Red Mill tests have to do whatsoever to the FACT that organic wheat has less proteins than conventional wheat?

Whole wheat is not eaten for it’s protein content, though it has a moderate level.

And that level is not effected by whether it is organic or conventional. At least Google cannot find a difference when the question is posed.

It’s eaten for minerals, calories and fiber. It’s incomplete protein is a side benefit when combined with legumes.

If you don’t like it, don’t eat it. And don’t misinform people.
