Organic whole wheat flour is 12-15% protein.

Loaded with essential minerals. And fiber.

Big whoop. Loaded primarily with carbs. But better than processed flour.

Ironically, “organic” wheat, whole or not, because it is deficient in nitrogen fertilizer, always has LESS protein than conventional wheat . So if protein is your point, the “organic” schtick negates it, especially when people must survive on bread (which is probably the case of more than half humanity).

Moreover, it’s nearly impossible to find “whole wheat” in supermarkets, since most of its fat & protein rich germ has been removed or “ultra processed” to improve conservation. So the “whole bread” that people buy is a scam. If you can really find whole bread, it tastes like crap.

Finally, the elephant in the room is that wheat is loaded with ... carbs, allergens and anti-nutrients. A lot of people can’t even eat it but don’t know it because of the “healthy food” propaganda (I have a friend who is constantly sick by food over her first 40 years until she is diagnosed as allegic to gluten, not by a doctor, not by a nutritionnist or other useless specialists she consulted but by a shop vendor!).

Yeah, you have been sold a bill of lies, lies and lies, by the same liars that invented the food pyramids.
