Good afternoon Diana! I hope your weekend is going well!

I looked at the prices for Beef Prime Rib in the local HyVee and Sams Club and did not see any roast for less than $65. Instead, bought a $27 bone in pork loin roast for Christmas. (7 Pounds 10 rib rack of pork loin roast ) Meat packers are focused on making hams this time of year and this roast is very available at a good price.

I will Season with Rosemary and Garlic, salt and pepper, and cook Sous Vide in vacuumed plastic bag in water at 138F for 5 hours. When done, remove saving liquid for gravy, dry it, do an egg wash, season, finish in a 375F oven for 20 or 30 min, Rest, and present. Sides...Wild Rice and Rice with Mushrooms and dried cranberries, 2025 Green Beans from the Freezer, Asparagus, maybe oven cooked small potatoes, gravy from the roast, bread or rolls, Stonehill wine from Herman MO; Will see what my wife has left for us!

Dessert....Mincemeat pie, maybe Apple too!

I had a nice reply to this all typed up and ready to hit send. Then I got distracted and then my browser updated and *poof* gone. lol

Long story short... Pops and our sons are the only ones that appreciate a properly cooked Prime Rib of Beef so I didn't buy one this year. I found fresh turkeys at the grocery for $.89/lb. so that's what I'm serving for Christmas dinner.

#2 Ex Navy son, DiL, and the grands are coming in from Sunny Florida on the 24th. Mrs. Augie went to Kansas last weekend to visit the grands at Ft. Riley. #3 Bradley Fighting Vehicle Master Gunner son is currently deployed in an unfriendly place overseas. It's too much for DiL to travel alone with three kids and the dog so we won't be seeing them for Christmas this time. #1 Homer Simpson son and his bunch will be here too. We'll miss the ones that aren't able to make it, and we'll be grateful to see the ones that come.

Howard has a sore foot, probably from too much rough play with #1 Marine Daughter's doberman yesterday, so he's feeling a bit sorry for himself this morning. House training is going very well. He's completely figured out that he needs to ring the jingle bells on the doorknob to go out for a potty break. He's even started knocking on the door to come back in when he's finished. We don't always hear it when he does that so we're going to hang bells on the exterior door knobs just as soon as I find a minute to stop at the dollar store.
