Your points are interesting. I hadn’t heard nor considered this before. We’re taught that the earth is NOT the center of the universe, yet before Hubble and Webb, we were told that the universe ended just a bit farther than we could see. This was reinforced by the amount of red shift at that distance. Now we’re told that it’s likely much farther than that. It seems that the farther we can see the bigger it gets.

No, not if we are orbiting the center of our galaxy.
If you can't see the edge of the universe in any direction, then your view is going to be a sphere; equally in all directions.
Imagine ants on a balloon. As the balloon inflates the ants see the other ants moving away from them. Which ant is in the middle? None ! The middle is perpendicular to their perceived movement from each other. In our case the balloon is a 3 dimensional surface on a fourth dimensional ballon. We can’t even see the middle because we have to look in a direction it is impossible for us to look!
