Wow! The Brits really know how to host a state dinner. The royal family loves Trump and vice versa.

He doesn’t have to do in a steak today.

The three-course menu consists of Hampshire watercress panna cotta with Parmesan shortbread and quail egg salad, chicken ballotin with a thyme and savoury-infused jus, and a vanilla ice cream bombe with Kentish raspberry sorbet and lightly poached Victoria plums.

A chicken ballotine is a classic French dish consisting of a boneless chicken leg or thigh stuffed, rolled, and tied into a tidy bundle before being cooked. It is often roasted to achieve a crispy skin, but it can also be poached or braised. The name comes from the French word “balle,” meaning “package” or “bundle”.

Ballotines can be made with either single pieces of meat, such as a leg and thigh, or from an entire deboned chicken. The technique allows you to create a visually impressive, restaurant-quality dish that can be filled with a wide variety of ingredients.

What’s inside the “package”?

The filling, or farce, is a crucial part of a ballotine, bringing flavor and moisture. Popular stuffing ideas include:

Sausage, nuts, and fruit: Italian sausage, apricots, and walnuts or pistachios.
Cheese and greens: A mixture of spinach, cheese (such as Gruyère or Swiss), and breadcrumbs.
Mushrooms: A rich duxelles (finely chopped mushrooms sautéed with herbs) adds deep, earthy flavor.
Mediterranean flavors: Artichokes, sun-dried tomatoes, and Pecorino cheese.
Sausage and mushroom: A savory combination of sausage meat and sautéed mushrooms.
Other ingredients: Prosciutto, cheese, fresh herbs, or even caramelized onions can also be used.

Agreed. I don’t eat meat that is still flopping around on the plate.

Wonder if they’re allowed to ask for a doggy bag. Surely the late queen would have understood bringing something home for the pup.

I am guessing all 5 are for wine. A different wine for each course. They don’t fill the glasses, of course (unlike me ☺️), so people don’t get loaded.

I prefer to tear my meat from the pulsing flanks of my kill, personally. I guess you could wave a lighter at it and call it good.

I like mine just unconscious. Guess it comes from eating my father’s cannibal sandwiches as a wee one.
