Also going to look into the dry brine, salted cabbage, as opposed to the salt/water method. Recipe blog pic of woman looked like she was Oriental but there’s so many recipe blogs that it’s likely some are made with/by AI these days. Will have to hit youtube.

Had no idea what to make of this guy by looks but figure he must have 10.3 million subscribers for a reason. A ton of info packed into a 7 minute video on how to make Kimchi. Techniques, reasons for this and that and full recipe with ingredients, all verbal so recording the recipe and/or taking notes will require a lot of pausing. (and of course plenty of links to amazon)

He's very listenable and his face/hair is only shows up at beginning and end of the video.
