
ENCHILADAS IN WHITE SAUCE / a little different
Can add hot sauce if you like heat.
Ing 2 whole chix breasts, cooked/shredded (or imitation crab) lb Monterey Jack, grated 3 oz can chp green chilies 2 cans cr/chicken soup (or nacho cheese soup) 1 pt sour cream 1/2 lb sharp Cheddar, grated 12 flour tortillas
Method Toss chicken, Jack cheese, chilies. Mix soup and sour cream. Heat oil on med. Fry tortillas; soften very quickly on both sides. Put 1/4 c filling in center. Add tbl soup/sour cream. Fold sides in, then roll. Place, seam down, in baker. Spread soup/sour cream over. Top with Cheddar. Bake 350°F 45 min.
