It is with fondest memories that I remember being invited over for one of my first sleepovers (in my new town) with my still best childhood friend (5th grade). She had an older sister in 9th grade (!!!) who made dinner for us that night, which was, you guessed it, porcupine meatballs! (Both of the parents were Ph.D’s, so all of their 7 kids had chores on a chalkboard. I loved that chalkboard schedule!). Somewhere I still have that typed recipe from her mom once I asked for it. Thanks to Liz, I don’t have to look for it all these zillion years later. It looks fairly similar to the one I remember, but haven’t made in many years. ❤️

Dad got an elk one year & brought the meat home .... LOTS of meat, similar amount to what you’d get processing a small steer.
It’s not beef, which we kids preferred. Looking back on the meat & quantity, I would currently love to have an elk in the freezer!
Anyway, we got tired of elk & mom resorted to telling us we were having ‘beef’ for dinner, but we knew better. One of her favorite dinners to make with ground elk was meatballs. We were having dinner guests one evening & meatballs were on the menu. I can remember one of the guests commenting on the meatballs & we kids gleefully & to mom’s horror, told them it was “elk balls” .... you can guess what they thought that meant. LOL! I still recall the look of panic on one guest’s face until mom could explain the truth of what they were eating, although technically, we kids were correct!
