I’ve read that freezing baked potatoes, then reheating, brings down the glycemic index, even more. Most french fries come frozen, and were partially boiled before freezing. Frying them in coconut oil and topping with bacon and cheese ought to bring down their glycemic index even more!

Ditto for pasta and rice. Just refrigerating for 24 hours is a huge help, too. And re-heating doesn’t reverse the positive effect.
