Most french fries come frozen, and were partially boiled before freezing. Frying them in coconut oil and topping with bacon and cheese ought to bring down their glycemic index even more!

I’ve heard you only have to refrigerate them. I wonder what the truth is. Neither? Both?

Chilling and then reheating white rice does the same.

Ditto for pasta and rice. Just refrigerating for 24 hours is a huge help, too. And re-heating doesn’t reverse the positive effect.
