I regularly nuke a 3-4 ounce potato with my dinner meat.
Cut it down the middle, then 2-3 cross cuts...slight mashing...and then top with EVOO, at least 2TSP.
Delicious. Healthy. Almost cheap.

Same here. I prefer quality olive oil over potatoes, butter is too greasy.
