They're meant to be over-the-top re: the stereotypes. I got a good chuckle out of it and I'm FBI (full blooded I-talian). If you look at the comments on these videos, its heartening to see how many people write things like, "Oh, man. I'm Italian and this is a little too accurate." People are re-discovering a sense of humor, as opposed to being offended by everything.
