What puzzled me back then was why the CO2 came out of solution when pored over ice.

Water dissolves more gas when it is cold. Heat drives gas out.
I don’t drink alcohol.
In my considered scientific opinion, it’s because they are more sparkly.
Oceans absorb CO2 when the climate cools and releases CO2 when the climate warms. The fall/rise in atmospheric CO2 always lags the fall/rise in global temperatures.
