After dinner, when the rice cools, I store it by carefully removing it with a spatula so the socarrat remains intact, preserving the flavor for the next day...
One thing I do like about AMAZON is that you can order saffron, truffels, escargot, etc. Although a bit pricey it is nice to be able to get those items.
Never have put lobster in my paella, kind of like that taste stand alone. Went to Valencia and was unimpressed with the paella, it was good but not much better than what I make. There is a bit of rice stirring at the beginning but once made up you should not stir it if you want the socarrat.
