Never NEVER eat undercooked pork or other exotic meats. I stick to chicken, turkey, pork, beef and lamb. Know the temps needed to properly cook things, and you will rarely have a problem.

Wild meat needs to be cooked completely or it can make you sick.

Here in Central Texas, feral hogs carry it. One hunter who caught it at my friend’s ranch (he didn’t follow the heavy neoprene glove rule) spent about 9 months recovering.

The fish is a tricky one. Lobsters, shrimp, scallops, clams, oysters and crab. Are a no go. To say nothing of catfish. I can live without a lot of seafood, but shrimp, scallops, and fried oysters? It’s been years since I ate them, but especially shrimp..YUMMMM.
I think the cut line is whatever eats live things in the sea is okay, whatever eats dead things is bad. Crabs exist to eat anything on the bottom of the water, not moving things. So, people who drown and make it to the bottom, are devoured by crabs. I DON’T EAT CRAB... Catfish, are gross compared to Halibut, Cod or Salmon. Never eat that stuff.

I once had a restaurant serve me pork that was medium rare.

I have made Bear Burgers from ground bear meat, not bad but I have to say the flavor is not for everyone but then again venison is also not for everyone. I would use both in a stew anytime though.

Can’t remember where I saw it, but there was a video of some Brit kids at some school that were asked to taste test some American food.
They all seemed to be reluctant, but were very surprised when they tried it, that they actually liked it better than Brit food.
One of the most reluctant, after he ate all of his, asked the Brit sitting next to him if he could have his to eat too. (It was biscuits and gravy, which, before they tried it, said it looked like vomit (the only gravy they know, is brown gravy)).
That is why you COOK YOUR FOOD, especially wild meat!
I have eaten plenty of bear made into summer sausage by a man I worked with. No problems.
I remember that episode. One man ate raw bear meat mixed with onions. Tartar Steak.
Mom made sure all our farm meat was Well Done.
