“Make it a meal with Eggplant Caponata and good bread”
My long departed Italian Grandmother made Eggplant Caponata for every Thanksgiving and Christmas Dinner for the Antipasto appetizer spread. Truly amazing. My sister has made it a few times from her memory of our Grandma’s recipe but the wife hates Eggplant so Sis doesn’t bother anymore if we are coming over for dinner.
