The whole point of miracles is to reveal the nature of God. The feeding of the 5000 for instance points to the provision God gives us each and every day. Miracles aren’t magic tricks to make us go wow and be entertained which is how I see the clay birds coming to life story. When he was before Herod and Herod demanded a miracle Jesus did not comply.
If you want wow just go out on a clear night and look at the universe God created.
In the Gospel of John he writes that Jesus did many miracles not written down in the books.

First, the Gospel of Thomas is not considered canon by any Christian sect since the Gnostic heretics. Second, this story isn’t new. It is one of the first anecdotes from the Gospel of Thomas I ever heard about.
