Well, they are right about processed cheese. Or should I say processed cheese product. It’s interesting how the manufacturers include “product” in their description. Gotta be a reason for that.
So it’s real cheese or nothing for me. And thanks to Biden’s inflation, sometimes it’s nothing.
There’s a time and place for a brick of Velveeta. I’ve no problem with it.

If you use something as an adjective, it doesn't have the same rules. If it's a noun, it has to actually be cheese.
They use the term “product” because yup, it includes non-cheese ingredients... chiefly milk and cream... that mean that the percentage of pure cheese contained is below some arbitrary threshold. I personally love blue cheese, but I think if you ask the average American would they like a cheese that is 15% milk or 2% mold, most people would go for the milk (unless they knew how yummy gorgonzola is). But cheese + 2% mold is cheese, but cheese + 15% other dairy products is “cheese product.”
Personally, I consider “cheese product” to be fit for niches: “American cheese” is bland kiddy food, being very resistant to crumbling; Velveeta melts beautifully; and sometimes being able to add sharp cheddar flavor as if it were whipped cream is just a delight.
This—American “cheese” “food”. Cheese food? Kind of reeks of the government says we can call it food—really, trust us, it’s edible. The gobblement says so. So awful.
