Having put numerous cows in the freezer over the years the thing that is always missing from the cut chart is where to put the target? One doesn’t want to mess up one or more of those yummy cuts with a poorly placed shot. And you certainly don’t want to wind up with a case of “lead ball tooth.”

IIRC, aim for the "X" between the eyes and the horns (or where the horns would be).
