Funny proof yesterday.

I ran out of flour. Unbleached, unbromated, non-enriched, high gluten flour I buy in 50 pound bags. I needed 200 grams more for my bread dough so I tossed in some store brand flour my wife had bought at Christmas to make cookies, to complete my 600 gram batch of bread dough.

The yeast I use won't eat it. Really. The yeast is smarter than humans. After 2 days of the yeast's refusal to eat store bought flour, I put it into the mulch pile.

Fortunately my new bag of flour (50#) arrived today. (King Arthur High Gluten, Sir Lancellot Flour)

Some of our earliest laws in our colonial beginnings were those aimed at food purity. To be a town baker you were under tremendous strains on grain stocks for flour. Adding other substances like bone meal, ash, Cellulose, etc.... to keep your business going could get you hung in the town square.

Some interesting adulterations to coffee, bread flour, tea, cheeses, sausages, sorghum, molasses, were wildly reported. Some were legally accepted in foodstuffs like beer, coffee, and teas, but bread and meats were governed by legal purity laws.

History always leaves us with the same problems.
